COTTO A VAPORE

A particularly pleasant and popular product which meat, mixed with the “humble” pork rind, become tasty and oozy. Made with a mix of different cuts (neck, cheek, shoulder and head) of Italian pork, adding salt and spices. The name comes from the casing, made with the whole rind of a pig’s foot. It’s brilliant pink colour and firm consistency make this a unique type of cured meat.
Among “seasonal” pork products that don’t require ageing, Zampone is considered a prized produce. It is also part of the SENZ’ALTRO line, a line made with only the ingredients that are strictly necessary, with no additives.
