Salame Cotto, a typical meat from the Piedmontese Tradition (PAT) is one of the historic Franchi product with a unique taste. The meat, obtained from carefully selected Italian pork legs, is coarsely minced and cured according to the Franchi’s recipes, then cased and slowly cooked in a steam oven.
This product has been added to the Italian Registry of Traditional Products (D. M. n. 350, 8-9-1999).
