Coppa di Parma is a traditional Italian specialty, a cured meat made with pork from a protected geographical indication. When sliced it has compact, firm meat, not greasy, typically streaked with red and pink for leaner and fatter parts. On the palate, it has a pleasant and delicate flavour with just the right amount of saltiness.
