
Culatta stagionata
The national “Culatta” is matured with its rind in a mountain environment. Its aroma is intense and characteristic and its flavor is pleasant and delicate. Although similar to “Culatello”, it is distinguished above all by its processing, which requires the rind to be kept for the entire duration of the seasoning: in this way a particularly sweet taste is obtained and a slice with a softer and more delicate texture on the palate.
