STEAM COOKED
Cotechino is a specialty that is eaten cooked, very popular in all regions of northern Italy. It owes its name to the Italian word for pork rind, cotica, and is made mainly with meat taken from the animal’s face, of only Italian-bred swine. Its full and pleasant flavour and appetizing scent make it a very popular product.
