Salame Cotto

Salame Cotto, a typical meat from the Piedmontese Tradition (PAT) is one of our historic products, with a unique taste. The meat is coarsely minced and cured according to the Franchi’s recipes, then cased and slowly cooked in a steam oven.

This product has been added to the Italian Registry of Traditional Agri-products (D. M. n. 350, 8-9-1999).
