Salame Cotto

Salame Cotto, a typical meat from the Piedmontese Tradition (PAT) is one of our historic products. The meat, obtained from small sized Italian swine, is coarsely minced and cured according to the Franchi’s recipes, then cased and slowly cooked in a steam oven: the result is truly unique.

This product has been added to the Italian Registry of Traditional Agri-products (D. M. n. 350, 8-9-1999).
